Here in Tamraght we're blessed with an abundance of bananas. So much so that our neighbouring village, Aourir, is eponymously nick-named Banana Village.
Bananas line the streets like bunting, bundled on carts, sold in kilos and half kilos, ripe and ready to eat. Or, to be baked into a delicious banana loaf.
Having tried many banana bread recipes, I love this one for its simplicity, and the perfect balance between a sweet & savoury snack. Plus, it's refined sugar, gluten and egg-free.
I have often substituted buckwheat with plain flour, it works but not as malty in flavour.
